As part of my Greek February, I am going to share another traditional Greek recipe with you. This week I will be showing you how to create a popular street food called Souvlaki which basically means, meat on a skewer. This was one of my favourite night out foods when I worked briefly in summer season in Zante. Souvlaki can be made with lamb, pork or chicken. So get ready to enjoy my Greek Chicken Souvlaki Recipe.

Greek Chicken Souvlaki Ingredients

  1. 4x Boneless Chicken Breasts
  2. 4x tbsp of Olive Oil
  3. 2x gloves of Garlic Minced or 2 tbsp of Garlic Granules
  4. 2x tbsp of Dried Oregano
  5. 1x cup of fresh Parsley finely chopped
  6. 1x tbsp of Black Pepper
  7. 4x tbsp of lemon juice
  8. Pita Bread

Equipment

  • Kebab Skewers – either metal or bamboo (if bamboo let them soak in water for 15 minutes, then take them out and dry. This prevents the skewers from burning)
  • 1x Large Bowel
  • Sharp Knife
  • Fridge
  • Cling Film
  • Grill (But you can fry or BBQ)

Total Time To Create Your Chicken Souvlaki Recipe

Prep Time: 1hr 20 mins (leave over night in the fridge) | Cooking Time: 10 Minutes | Total Time: 1hr 30 mins

How To Prepare the Greek Chicken Souvlaki Recipe

1.  Cut the 4x chicken breasts in 2cm pieces.

2.  Add 2x tbsp of garlic granules, 2x tbsp of dried oregano, 2x tbsp of  black pepper, add the cup of finely chopped parsley, 4x tbsp of olive oil and 4x tbsp of lemon juice in to a large bowl. Mix it all together until it become like a thick paste.

3.  Add the chicken pieces to the large bowl and use your hands to mix the chicken with the paste (marinade), till it is completely covered. Then cover over with cling film and place in the fridge for 1 hour (or you can leave it over night). This allows the marinade to be soaked into the chicken and for the flavour to really be infused.

4. Whilst the chicken is in the fridge, cut up the onions into thin circles and the cucumber into chunks of 4 and cut you lettuce up place in to another and sprinkle some lemon juice in, wrap up with cling film and place into the fridge as this will be you pitta filling.

5. Place your bamboo skewers into hot water to soak for 30 -60 mins, this prevents the bamboo skewers from burning under the grill.

6. After an hour take the chicken in marinade out of the fridge and start to thread the chicken pieces onto the skewers, and place under a preheated grill for 10 minutes, turning occasionally until nicely coloured  and cooked through on all sides.

7.  Whilst your chicken souvlaki is on the grill heat up your pita breads in the oven, (grill or microwave). For this I have walmed these in the oven. For great tasted to the pitta brush olive oil on both sides
